Lima Beans also called “butter beans” are rich in cholesterol-lowering fiber and very low in fat. Lima beans are also a good source of folate, protein, potassium, vitamin B1, vitamin B6 and iron. Fresh lima beans are not widely available, but may be found at farmers’ markets. Lima beans will most commonly be found frozen or canned.
Simple Garlicky Lima Beans
Makes 8 servings
Ingredients:
- 4 cups fresh lima beans
- 2 ½ cups water
- 1 tablespoon olive oil
- 2 garlic cloves, crushed
- 3 thyme sprigs
- 1 bay leaf
- ½ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
Preparation:
- Sort and wash beans; drain.
- Combine beans, water, olive oil, garlic, thyme and bay leaf in a medium saucepan. Bring to a boil. Cover, reduce heat, and simmer 20 minutes or until tender.
- Discard thyme sprigs and bay leaf. Stir in salt and pepper.
